For almost 500 years, Locatelli Pecorino Romano has been made in Italy using the same care.  This sheep's milk cheese is pressed and cooked.  It is spicy and sharp with a dry, granular texture.  Romano is a hard table cheese and can be easily shredded for your favorite Italian recipes.  It can be served cubed with beer or a full-bodied red wine, as well.
